Miami’s favorite health hub expands its location, menu, and is making a difference this holiday season! Carrot Express has become South Florida’s healthy eatery go-to. Founded in 1993, Mario Laufer saw the lack of nutritious cuisine in Miami Beach and started serving a balance of delicious and healthy fare inside a gas station on Alton Road. Their talent and entrepreneurial spirit was hard to ignore. Nearly 20 years later, Carrot Express now has six locations in South Florida!

Although the Carrot Express family always outdoes themselves with making sure their food is not only delicious, healthy, and Instagram worthy, the chain is now looking to make a positive mark in the community. Shake for the cause this holiday season!

Founder, Mario Laufer, was inspired by his friend Caroline Cardenas and her newborn daughter Lily, who was born with Down Syndrome. In honor of Lily, all six Carrot Express locations are now serving the Lily’s Date Shake. $1 dollar from each beverage will go towards Gigi’s Playhouse Miami which is the only nationwide network of Down Syndrome achievement centers that is committed to changing lives through free, results-driven programs for individuals of all ages, families, and communities! The refreshing shake is blended with dates, roasted cashews, cocoa nib, almond milk and bananas.

 Writer’s Menu Recommendations:

Carrot Express’ menu features something for every kind of dietary restriction in addition to their vast and expansive menu including a wide range of salads, smoothies, bowls, wraps, fresh pressed juices and smoothies. Pictured below are some fan-favorite dishes.

Poke Bowl: Brown rice, seaweed salad, edamame, arugula, cucumber, scallions, avocado, carrots, pickled ginger, sesame seeds, crispy onion, spicy mayo, and eel sauce. Choice of fresh ahi tuna or Scottish salmon.

Paradise Açaí Bowl: Organic Brazilian açaí, mixed berries, mango, bananas, almond milk, and topped with fresh seasonal fruit, coconut flakes, granola and honey.

The Impossible Burger: A plant-based burger with arugula, red onions, tomato, alfalfa, mashed sweet plantain, and mustard aioli sauce on a toasted, multigrain bun.

Vegan Picadillo Bowl: A nod to Miami culture, Carrot Express hit the spot with this bowl consisting of seasoned, crumbled beyond meat picadillo over brown rice, black beans, avocado, pico de gallo and sweet plantains.

COVID-19 Precautions:

All of the staff wears masks, gloves, and implements a screen-shield at the register. Hand sanitizer stations are available throughout the restaurant and outdoor dining is available.
